Easy-Peasy Vegan Hot Chocolate

I admit it, I rarely follow recipes. I always end up improvising depending on what’s in the fridge. So, I often adapt recipes online to make them vegetarian or vegan.
These past cold months I have been experimenting with hot chocolate, and this version is my favourite because it has a coconut aftertaste.
Ingredients for two servings (or one if you are hungry):
- 250 ml coconut milk (I use Alpro Coconut drink)
- 2 tablespoons of dark cocoa powder
- 2 tablespoons of sugar
- 1 tablespoon of cornflour
Mix all dry ingredients in a pan. Put the pan on the hob (low-medium temperature) and pour in the coconut milk. Mix for about 3-4 minutes, until your chocolate becomes smooth. And then it’s time to enjoy it!
